A kitchen built around one flame
In 1998, Devinder Kaur set up a single coal angeethi on a Connaught Lane pavement and started serving the food she grew up on — smoky, generous, unhurried. Word spread one plate at a time.
Three decades on, that first ember still lights every service. We grind our own masalas at dawn, marinate overnight, and finish each dish over live charcoal. Nothing rushed, nothing frozen — just slow fire and bold spice.
